Some of my loyal readers might be surprised to see that I’m doubling up on months for this “Things I’m Loving” post. Based on my reader survey and comments online, I know that a lot of you really look forward to these posts each month. However, I’ve decided to start doing them every other month instead of each one. But don’t worry; expect them to be double the fun and double the love since it will be two months packed into one post. This change will allow me to spend extra time focusing on my more “intense” posts, like a few that I’ve got brewing in the background here which I’m SO PUMPED to share with you. It will also hopefully allow me to just like, … you know … CHILL. I’m not always good at that, but I’m working on it. I’ve also got two of my besties getting married this year, so 2016 is about to fly by and I want to make sure I’m achieving some kind of balance in my life. “Inspiralized” Beet Pasta with Oranges, Honey Walnuts and Crispy Kale
For a while there I was eyeing up the “spiralizer” gadget on the internet. I considered putting it in my Amazon cart many times, but ultimately decided that it was just one of those things with one purpose and it would take up too much space in our small kitchen. But then around the turn of the new year (big surprise), Robert and I decided we wanted to start limiting how often we make pasta, hoping to incorporate some lighter meals into our weeknights more often. It can be really tempting to make a hearty pasta dish one night because it will last us through half the week, but that also means we end up eating pasta for 3 nights in a row. It’s tasty and efficient (cooking one meal for 3 days), but when that one meal is pasta, it can also leave you feeling heavy and bloated throughout the week. So with our newfound desire to start cooking lighter meals, Robert expressed an interest in getting a spiralizer (which I took as a major green light) and we bought one as a bit of an impulse purchase during our frenzy of “new year, new us.” [Read more…]
Things I’m Loving: March 2015
I’m pretty sure March 2015 takes the prize for the most blog posts I’ve ever published in one month. We talked about my wedding (and the cake, obvs), pie, pizza (also technically pie), blogging thoughts (in my newest #commute post), waffles, and brownie tiramisu trifles for virtual baby showers. Geez! Crazy. I’m not really sure how I got all of that done in one month. In other news, Erica from Nommable made my wedding cupcakes on her spring break and wrote the sweetest blog post about it and about reaching out to other bloggers. (Btw – PLEASE leave a comment if you’re another blogger reading this. I’ve found some of my favorite new blogs because people commented on one of my posts and I went back to their site. I wanna say hi!) On Saturday I ate NOTHING. BUT. PIZZA. Expect a post about that in the next few weeks. This week I’m attempting to detox from that, and then we’re heading to Ohio for the Easter weekend where I’m hoping to catch up on some cookbook reading and do some chilling out.
