Wish List: Pie

Wish List: Pie

Happy Pi Day!!!! Did you know this is one of the most epic Pi Days ever? The number pi is 3.14159265359 ... blah blah blah and today is 3.14.15, aka the first 5 digits of pi. I'm a math nerd, so this is kind of a big deal. When I was in high school my AP Calc class (which consisted of me and about ten of my best friends) would force our ever-gracious teacher, Mr. Miller, to let us celebrate Pi Day, which meant we brought in tons of pie and did nothing but eat pie all class period. It was great. I wanted to celebrate this year's Pi Day with a virtual Pi Day party, if you will, by giving you a roundup of recipes I've been wanting to make.

I don't think I've ever loved pie - it's a dessert I could easily pass up more than others. BUT: I'm finally starting to see the light. For Thanksgiving I tried my hand at making pie from scratch by myself for the first time, using two recipes from the Four and Twenty Blackbirds Pie Book (an amazing book, possibly the only one you would ever need on the subject of pie): their signature salty honey pie (a major hit with the family), and the black bottom oatmeal pie (still good, but paled in comparison to the salty honey). My crust turned out really well, and I very much enjoyed the therapeutic process of making it. Then for New Year's I made crack pie, another recipe that lived up to its hype. While I still don't think I could ever choose pie over cake or even a good cookie, I'm definitely coming around to it.

When I made the pie I used as reference for this illustration, I made the all-butter crust from Four & Twenty Blackbirds again (honestly I'm afraid to use any other recipe because this one has worked so well), and then we had a jar of canned homemade spiced peach pie filling from Robert's Aunt Susan that we received for Christmas, so that went inside. (I followed the recipe in the cookbook for Paprika Peach pie as reference for baking instructions.) After eating that delicious pie and enjoying those cold pie leftovers that everybody always seems to rave about, I'm more excited than ever to try some of these recipes.
