Papaya Coconut Popsicles & A Print Giveaway

Today is really exciting because I've partnered up with Liz from Floating Kitchen to bring you these popsicles and a giveaway. She was kind enough to come up with the recipe for these bad boys, and then I illustrated them and we're hosting a giveaway for one of my prints of the popsicle illustration. Liz has become a very good "blog friend" to me recently. We have bonded over our love for things like chocolate and bourbon, and we're hoping to meet up in person someday soon so we can indulge in those loves together. She also gets swag points from me because she lives on an island. I must admit - I get a little jealous whenever I see her beach pics (with her cute pup) on Instagram. One day I would love to live by the beach! If Liz could be my neighbor that would just be even better.

Making these popsicles was the first time I've ever worked with papaya. I had always viewed it as an exotic ingredient that I didn't really know how to handle, so this was a learning experience for me. Now that I've passed that hurdle (and it turns out they're really easy to work with), I'll have to start experimenting! Liz was so nice - I was sending her pictures from the grocery store to make sure I got the right kind of papaya, and then I sent her a picture of it on my kitchen counter to make sure it was ripe enough. She was a great guide and it all worked out well. (PS - papaya seeds are WEIRD.)

These popsicles make me think of a creamsicle - but with a twist, thanks to the "exotic" ingredients. I like that contrast of the sweet, icy fruit against the creaminess of the coconut milk. If those flavors are up your alley, then you will LOVE these popsicles. They're also super easy! After some quick blending and pouring, they just need some time in the freezer in between adding each layer, which you can easily do while taking care of other things in the kitchen (like meal prepping for lunches and cleaning, in my case).
