I used to always believe that when it comes to baking, bigger = better. If I’m taking the time to bake something, I want a lot of it. I’ve been an admirer of The Vanilla Bean Blog by Sarah Kieffer for years. I was anxiously awaiting the release of her cookbook (The Vanilla Bean Baking Book) ever since she announced it, and I followed along diligently through her Instagram account, which documented her obsessive recipe testing and hard work while creating it. When I went to Minneapolis last April I was thrilled to meet her. I may have talked her ear off a bit about the making of her book. (Sorry about that, Sarah – I was a bit tipsy and I talk a lot when I’m drunk, and my nervousness just added to the chaos.) She’s as sweet and humble in person as you would expect her to be. I’ve always felt a kinship with her because of our love of books and baking, but now after reading her book and learning more about her, it turns out we have even more in common than I thought. It’s October but I’m talking about September. Because September was nuts! There were many moments in the past month when I had zero idea what month I was in (August, maybe?) and then realized it was basically October. WHAT. My body seems to know these things better than my brain sometimes. If we go way back in my origin story, we could probably say this blog happened because of Christmas cookies. That’s where my love of baking came from, which led to my love of cooking, and then cookbooks, and then food blogs, and now here we are. While I don’t know if my mom would call herself a “baker,” she always made sure we had plenty of homemade cookies for Christmas. My brothers and I would always help with the cut-out sugar cookies, fighting over who got to use the Santa cookie cutter, while my mom yelled at us for eating too much dough and Jesse and I debated the perfect sprinkle-to-cookie ratio. It seems only fitting that I should start this blog off the right way: with a cake recipe. Not just any old cake recipe, but what is without a doubt the best cake I have ever made. Yet.
When I first saw this cake on Linda’s blog, The Tart Tart, I knew I absolutely had to make it, but it had to be the right occasion; it was a show-stopper. That occasion turned out to be Easter this year. I was in charge of making dessert (of course – I probably volunteered for it), so I started scrolling through my Pinterest boards to see if anything popped out at me. I saw this cake and immediately knew it was the perfect choice: The flavor palette is a bit unique and reminded me of Spring, it seemed like something everyone in the family would appreciate, and I was dying for an excuse to make it.
