After the craziness of our recent move (we bought a house … ah!) and a family vacation, it feels good to finally have my computer set up at my desk in the new house and to be working on this blog again. I have been wanting to tell you guys about this recipe for SO LONG. It’s from the new book, Love Real Food, by Kathryne Taylor of the blog Cookie and Kate. I did some recipe testing for the book and I’ve been stoked about its release ever since. It seems like I’m always searching for the perfect lunch food. It has to fit a lot of criteria: easy to pack, keeps well, requires minimal prep work, and it has to be filling but not too heavy while also being healthy and cheap. That’s a tall order! There aren’t many options that fit the bill for me, and then if I find one that works I tend to ride it out until I’m sick of it. Then the process starts all over again. I recently put together this sweet potato burrito bowl idea, and it has worked out perfectly for me. Well now that I’ve FINALLY covered that wedding of ours here on the blog, it’s about time for me to tell you about that honeymoon we took.
That sweet, glorious, perfect, unbelievable honeymoon. The one we took A YEAR ago. Woops. It’s not like I didn’t want to tell you about it, it’s just that I wanted to talk about the wedding first (because we need to go in order), and well … because life happens. But here we are! And don’t you worry – I’m the kind of person who takes notes during her travels so she can remember everything she ate, so I’ll be able to pull those memories out of my brain thanks to my trusty iPhone notes. Near the end of our trip we also spent some time during one of our last meals filling in the gaps of my notes to write down what we did between everything we ate (because I guess that stuff is important too). We realized that we could hardly remember what all we had done at the beginning of the trip, so we had to get it all written down before it became totally impossible to remember. Summer is finally here! I know it’s not official yet, but it sure feels like summer lately. Tank tops and sandals have become a daily staple and the air conditioners are going strong. I’m sad that we only had about a week of that perfect weather where you keep the windows open all day long, but I’m glad our terrible winter has ended (fingers crossed). And I’m so ready for the beach, it’s not even funny. I’ve been “tonin’ it up!” I can’t wait to use my fancy new yoga mat on the deck of the beach house and go for runs by the water with the sea breeze blowing in my hair. I’m planning to sleep in a bit, so maybe I’ll work out at 7 or 8 instead of 5:45 like I do now (oh geez I’m getting old). It’s going to be glorious! May was a lot of fun – We had a few road trips up to the Finger Lakes for my brother-in-law’s college graduation (congrats Daniel!) and for a Memorial Day/Robert’s Birthday weekend bash with friends. Since hearing of pasta recipes like this one, I’ve been very intrigued. I love the idea of a pasta dish that merely requires you to mix some things in a bowl, toss in the cooked pasta (and some reserved pasta cooking liquid), garnish with some cheese, and serve. If you have access to fresh and flavorful ingredients, it’s the best solution for a quick and satisfying meal. [Read more…]
